Astragalus and Cardamom Rice Pudding

Astragalus is an immune enhancing herb that can help your body to cope with the everyday stresses of life. Having your plant medicine in your food can be very enjoyable.

You will need:

1 C basmati rice

1 can coconut milk

2 Tsp astragalus root powder

2 Tsp cardamom powder

2 Tsp honey

Makes 4 cups - 4-8 servings (De La Foret, 2017)

  • Put into a pan : coconut milk, astragalus powder, rice and 1 2/3 C of water

  • Have on medium heat until mixture starts to simmer

  • Reduce heat to low

  • Stir, then cover and let cook for 20mins

  • Remove from heat.

  • Add cardamom and honey

  • Mix well

  • Enjoy while warm. Eat within 3 days.
